In the La Paz region the Finca Las Delicias farm resides at 1600+ above sea level. The cool climate allows beans ripen more slowly enriching its natural sugars. After harvesting the beans are fermented in its natural state for 3 days before drying. This medium roast judiciously caramelized the beans sugars resulting in intense berry notes, delicate acidity, and a balanced sweet finish.
