The Ramirez family bought the farm in 1969 and still runs it today—35 hectares of volcanic soil at about 1,400 meters, where a temperate climate lets the cherries ripen slowly and evenly. Most of the trees are Pacas, a natural mutation of Bourbon that El Salvador is famous for, with newer plantings of Anacafe 14 coming along beside them.\u003c\/p\u003e\u003cp\u003eThe washed process is what keeps this cup so clean. After hand-picking and sorting, the beans are fully washed and then sun-dried on raised beds, which strips away the fruit and lets the bean itself do the talking.
