Finca Montes Urales sits near Apaneca in El Salvador's Ahuachapán department, right in the Apaneca-Ilamatepec range that produces most of the country's best-known coffees. The Ramirez family bought the farm in 1969 and still runs it today—35 hectares of volcanic soil at about 1,400 meters, where a temperate climate lets the cherries ripen slowly and evenly. Most of the trees are Pacas, a natural mutation of Bourbon that El Salvador is famous for, with newer plantings of Anacafe 14 coming along beside them.

The washed process is what keeps this cup so clean. After hand-picking and sorting, the beans are fully washed and then sun-dried on raised beds, which strips away the fruit and lets the bean itself do the talking. What you're tasting is Pacas at its most classic: a nutty, peanut-butter richness with a gentle sweetness underneath and none of the fruit funk you'd get from a natural. We roast it light to keep that sweetness soft and the body smooth—an easy, comforting daily cup with real traceability behind it.
